Know of any good recipes for spanish rice? I'm talking about tried-and-true recipes. I've tried several off the internet, and they're horrible. They're either waaaaay too spice-laden, or they're so karnsarned HOT that they like to burn my tongue right off. The stuff I'm loooking for is similar to the recipe I use to make the hamburger/rice mixture that goes inside of stuffed green peppers, but minus the burger.

One recipe that I tried recently probably would have been real close, but it called for Wyler's beef bouillon (instant) and I don't use that stuff. Maybe the MSG is what's missing in the recipes I've tried!! Well, if that's the case, I'll have to settle for less taste, I guess.

To tell you the truth, I "saved" so many recipes that I found online, I couldn't tell you if I was at that site or not. Thanks and I'll check it out to be sure.

I tried some Dirty Rice in a box once (Zataran's or something) but didn't care for it. Seemed like it had a curry taste and I don't like that. Maybe if I made it myself, though, I might feel differently. Good suggestion, I'll check on that.

I just read on one of the foodie websites I visited that ketsup is the "secret" to good spanish rice.

I can't imagine ketsup as a secret ingredient in anything! But I found one recipe that sounds kinda promising. If it turns out good, I'll post it here, k?

I suppose that must be the reason, but man, if I'd known the secret before, maybe some of the other recipes I tried would have been fine. Now I hafta start all over and try them again! I did find one that sounds very good at allrecipes.com (actually I found several but only one sounded promising to me). One of those did call for brown sugar, I think about a tablespoon or so, but I thought it was odd. I don't remember my Mom's tasting sweet, but I'll know the flavor I'm looking for when I taste it, so I'll try anything!

My grandmother used to put a pinch of sugar in a lot of her recipes. Even in string beans (along with pork fat). Then she would cook them to death; as they all did back then.

Ha! That's probably why kids back then didn't care much for vegetables. A bunch of soggy green gunk on the plate wasn't too interesting. Maybe that's why I still prefer things like squash and more of the winter veggies. My Mom usually baked or roasted those, instead of boiling. So do I.
