Here's a food idea for you to explore.
To tell the truth, I've gotten so frustrated with trying to make my own mayo, because I'll never again purchase the crap from the grocery stores (loaded with soy oil) that I've started a whole new idea in the past couple of months, and even my husband likes it - and that's saying something because he's in love with Miracle Whip (at least he was until he started reading up on soy oil).
Instead of messing around with mayo, I either make my own creme fraiche or I buy the Bellwether Farms Creme Fraiche (I also use it as a starter when making my own) and just substitute it for mayo or Miracle Whip. It's better than regular sour cream, IMO, and if you add just a little onion powder and some sea salt and pepper it makes a great substitute for mayo.
Just today I ground up some baked chicken breasts with my meat grinder attachment on my KitchenAid mixer, and added some pickles to the meat. Then I put it into a refrigerator container and cool it. When I'm ready to make a sandwich, I mix a little of the meat mixture with a little of the creme fraiche and we're set. Today I had a chicken salad sandwich on some homemade sourdough bread slices (open faced) and put some chopped lettuce on top. On my plate I also had some chunks of avocado, a hard boiled egg and some homemade potato chips, along with a big glass of raw milk. I'm good to go now.
